Vegan Black Bean Stew

Super hearty and savory, this satisfying stew is ready in no time.

Makes 6 cups


  • 1 T extra virgin olive oil
  • 2 medium onions, chopped
  • 2 stalks celery, sliced
  • 3 14-oz cans low-sodium black beans
  • 1 14-oz can diced tomatoes
  • 2 cloves garlic, minced
  • 1 T chili powder
  • 1 T cumin
  • 1 c water
  • 1 1/2 c vegetable broth
  • 3 scant T Activz Carrot Powder
  • 2 tsp salt, black pepper to taste
  • Cilantro (optional)


  1. Sauté onions and celery in olive oil in large pot 3 minutes.
  2. Combine black beans and tomatoes in blender and blend till smooth.
  3. Add pureed beans and tomatoes to pot, then all remaining ingredients, being careful to whisk Activz Carrot Powder in well. Simmer 20 minutes.
  4. Serve over chips or cornbread and garnish with cilantro.
