Kamut and Fruit Muffins with Salba® Chia

Hearty, fruity and easy to grab on the run, these muffins make a tasty and quick source of fuel. Kamut flour is a low-gluten, easily digested ancient grain with a beautiful golden color and a taste similar to wheat.

Makes 12 muffins


  • Wet ingredients:
  • 1/2 c applesauce
  • 1/4 c diced fresh apples
  • 1 egg
  • 1/3 c rice milk
  • 1/3 c grapeseed oil
  • 1/4 c honey
  • 1/4 c agave
  • Dry ingredients:
  • 1 1/4 c kamut flour (or 1 1/4 c whole-wheat flour)
  • 2 tsp baking powder
  • 1 1/2 tsp Salba® chia seeds
  • 1/2 tsp salt
  • 3 scant tsp Activz Blueberry-Acai Powder


  1. Preheat oven to 350 degrees and prepare cupcake tin with 12 liners.
  2. Combine wet ingredients in a large bowl and dry ingredients in a second bowl. Then mix together.
  3. Fill muffin liners 2/3 full of batter and bake 15-18 minutes.
