Chicken Tortilla Soup

It's a party any time this fresh, colorful and hearty soup is on the menu!

Makes 10 cups


  • 1 lb chicken breast
  • 3 T extra virgin olive oil, divided
  • 1/2 tsp salt
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp dried oregano
  • 1 28-oz can diced tomatoes
  • 2 c low-sodium chicken broth
  • 2 c water
  • 1 14-oz can corn
  • 1 14-oz can white hominy
  • 1 4-oz can diced green chiles
  • 1/2 c Activz Sweet Potato Powder
  • Salt and pepper to taste
  • Garnish:
  • Avocado
  • Cheese
  • Fresh tomatoes, chopped
  • Green onion
  • Cilantro


  1. Heat grill to 500 degrees. Coat chicken breast in 2 T olive oil and 1/2 tsp salt, then place chicken on grill. Turn after 2 minutes.
  2. When both sides are seared, transfer chicken to top rack and close grill 10 minutes. Plate chicken, wrap with tinfoil and let sit at least 5 minutes to seal in juices. Slice, then re-cover with tinfoil and set aside.
  3. Sauté onion and garlic in remaining olive oil in large soup pot about 3 minutes. Add all remaining soup ingredients, being careful to whisk constantly while adding Activz Sweet Potato powder.
  4. Simmer 20 minutes, then add grilled and sliced chicken breast.
  5. Serve garnished with avocado, cheese, tomato, green onion, cilantro, and tortilla chips.
