We are your completely dysfunctional, surviving by the seat of our pants, blended family! Just one look at us, and you can tell we are embracing the “fake it till you make it” philosophy. If you cornered my hubby or I at any given moment, we would not be able to define what normal is around our little abode. We have just learned to survive chaos by holding our breath and managing a quirky smile.

There is an itty-bitty window once a year or so when my kids venture back to my family’s farm and embrace their roots. I use that sacred opportunity to yodel up the mountain with a bunch of teenage girls and try to teach them skills that I don’t even kind-of sort-of possess out in the wild. I have been completely transparent with these sweet girls’ parents. They pretend to reassure me that they are not concerned — still, I see the fear in their eyes!

Because of this, I feel a bit entitled to whatever might momentarily suit any selfish desire I have once I crawl out of my grossly disappointing, sub-par, generic hiking boots that have left me too emotionally paranoid to even consider a pedicure. So I turn to goat cheese to provide me the creamy comfort that no s’more in the world can hold a candle to. But do I stop there? Oh, heavens no!  I am living like a princess at this point and grab the heirloom tomatoes since I have 12 more hours until the little people adorn me with their presence and not-so-gentle demands. Besides, I have not unlocked their inner desire to embrace tomatoes instead of treating these red vegetables like a plague infesting the dinner plates.

Given my camping conquest earlier in the week, I might have been feeling a touch invincible as I unabashedly added Activz Kale Powder to the goat cheese creation I was about to serve at dinner. For the two of us, my husband and me, to be at the table without children attempting to drink from the milk jug on a dare or give their unsolicited relationship advice to a teenage sibling was a rare moment that has become a urban marital myth! Clearly we were both surrendering to this magical dinner moment that would not repeat itself again for quite some time as we wolfed down every last morsel without a word uttered between us. Here are the savory tomato biscuits that allowed my selfish indulgence to be rich in nutritional success!

Goat Cheese Biscuit Spread with Tomato Salad Topping

You can pair this spread with your favorite homemade biscuit recipe or surrender to your busy life and bake some flaky refrigerator biscuits.

Ingredients:

Tomato Salad Topping:

  • 1 1/3 c quartered heirloom cherry or grape tomatoes
  • 1 T olive oil
  • 1 1/2 T red wine vinegar
  • 1 tsp balsamic vinegar
  • 2 scallions, thinly sliced
  • Salt and pepper
  • Pinch of sugar

Goat Cheese Spread:

Directions:

  1. Combine all salad ingredients in large bowl and stir until well-combined. Let stand at room temperature.
  2. To make cheese spread, whip heavy cream until peaks form, then add goat cheese and Activz Kale Powder and mix until creamy.
  3. Cut biscuits in half and generously spread first with goat cheese mixture, then tomato salad toppings. Enjoy!
